Nothing warms everyone up on a cold afternoon like a nice bowl of soup! With just a handful of ingredients and some leftover mashed potatoes from dinner the night before, your child can make this simple and healthy soup.
What You Need:
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- 2 green onions chopped
- 1 clove garlic chopped
- 2 tablespoons flour
- 32 ounces vegetable stock
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- Stockpot
- Spatula
- Salt, pepper, dried parsley
What You Do:
- Start by warming the stockpot over medium heat and adding the butter and oil. Invite your child to help chop the green onions and garlic using a paring knife. Learning to use a knife is one of the most important kitchen skills to master!
- Invite your child to add the green onions and garlic to the butter and oil and let cook for one minute. Now your child can measure the flour, add it to the stockpot and stir it with the spatula. Mixing flour and fat together creates a roux, a classic French cooking technique used for thickening soups and sauces!
- After the flour, butter and oil have cooked for another minute, your child can carefully pour in the vegetable stock while stirring well. Now he can let the broth simmer for about 10 minutes.
- Now it’s time for the mashed potatoes! Your child can slowly mix in the potatoes while stirring until they are incorporated. Then, he can grate the cheese and measure 1 cup to also add to the soup, stirring until the cheese melts.
- All that’s left to do is to get out the bowls and ladle out the soup for dinner! He can add a dash of salt, pepper, and dried parsley to each bowl for extra flavour!
